VEGAN SUBWAY SANDWICH


Ok guys, this is a quick and easy way to fix one of your favorites that you may miss from time to time. I'm usually not a sandwich person, but when I did eat one I use to get a steak and cheese from Subway. Now that I don't eat a lot of meat, I challenged myself to create vegetarian/vegan versions of my favorite meals. Keep reading below to see how simple this comfort meal is!


Ingredients:

Hoagie bread

Tomatoes

Shredded lettuce

Bell peppers

Onions

Vegan cheese ( I love Daiya)

Mushrooms

Tofurky deli slices

Veganaise

Mustard


Optional:

Pepper

Oil and Vinegar


Prep:

Chop deli slices in thin slivers like chopped steak

Cut bell peppers, mushrooms, and onions into think strips


Directions:

Pour a cap size of olive oil and heat the pan on medium. Put in bell peppers, mushrooms, and onions until cooked to your preference. Add your vegan cheese until it's nice and melted.

Toast hoagie bun and then spread Veganaise on both sides. Add your shredded lettuce and sliced tomatoes. Add pepper on top of tomatoes. Place chopped Tofurky, vegetables, and cheese mixture on the bun. Add Mustard with oil and vinegar if you'd like.


That's it! Now you can enjoy one of your favorite comfort foods. Pair with salad, fries, or chips.
